Sundried Tomato, Mascarpone and Caramelised onion Puff Pastry Pie

PREP TIME: 10 min | COOKING TIME: 15 min SERVES: 4 | PAIRING: Great with glass of deep red wine Don’t let the long title fool you with this easy to make recipe.  If you have all the ingredients at hand, it hardly takes 10 minutes to put it together.  It is also easy to substitute some of the ingredients for example, substitute the sundried tomatoes with thinly sliced fresh ones, and the caramelised onion with olive tapenade.  Similarly, you can use cream cheese instead of Mascarpone. Ingredients 1 roll ready-made puff pastry (the savoury ones work particularly well) 1 packet of sundried tomatoes (preferably in olive oil, otherwise soaked in boiling water) 1 jar caramelised balsamic onion 1 tub of Mascarpone cheese Method Preheat the oven to 220°C. Roll out the puff pastry on a prepared baking tin.  Fold over 1cm on all four sides and press down firmly. Bake for 10 to 12 minutes or until slightly browned. Add dollops of Mascarpone all over the baked puff pastry base. Arrange the sundried tomatoes and spoonfuls of caramelised onion on top. PREP TIME: 20 min | COOKING TIME: 10 min (plus 30 min in freezer) SERVES: 6-8 | PAIRING: Great with coffee INGREDIENTS ⅓ cup frozen raspberries ⅓ cup shredded coconut (or coconut flakes for a chunkier version) ⅓ cup coconut oil 80 g salted butter 2 tablespoons raw cocoa powder or cocoa 2-3 tablespoon rice malt syrup METHOD Line a dinner plate or baking tray with baking paper (a dinner plate is ideal as the slight indent creates a good shape). Scatter the berries and coconut on the plate or baking tray. Melt the oil and butter in a saucepan or in the microwave (the oil takes longer to melt, so add the butter a little after), then stir in the cocoa powder and syrup.
