Advanced Culinary Arts Training Program

The syllabus as prescribed by our main examination body, City & Guilds, is adapted to train students in the field of not only culinary arts, but also food and beverage operations and services.

Full-time programsThis program consists of the following City & Guilds vocational qualifications:

 

  • Diploma in Food Preparation and Culinary Arts
  • Diploma in Food Preparation and Culinary Arts – Patisserie

Additional training included in this program:

  • First Aid Level 1

Professional Membership:

  • 2 year membership with SACA

This is a 3 year, full-time training program– the first 18 months are spent at the FBI for theoretical and practical training and the last 18 months the student is placed at a five star establishment in South Africa for experiential training.

Tuition fees as per the application forms include all uniforms (3 chefs jackets, 2 aprons, 2 neckties, 2 skullcaps), a professional knife set, all ingredients used by the student over the 2 year period for practical classes, all study material and recipes as well as all City & Guilds registration and examination fees.

Syllabus

Advanced Culinary Studies – practical and theory
This component will give the student the skills, knowledge and judgement to operate in the culinary arena at a professional level.

Food and Beverage Studies – practical and theory
Meeting guest expectations in the bar or restaurant is crucial to a successful career. In this component, students will be given the required knowledge to be actively involved in service delivery of food and beverages in differentiated outlets.

French
French is the short hand of culinary arts and is taught to facilitate and enhance communication in the kitchen.

Management
In order to manage the day-to-day operations of the kitchen and F&B departments, students are trained on management principles, staffing, marketing, financial controls and hospitality safety.

Food Styling
You eat with your eyes and so presenting food with visual appeal is a vital requirement in the hospitality industry. Food styling teaches the skills required to master this aspect and educate and encourage students to create their own food style whilst being trained to respect the harmony of food and wine.

Training Program in Patisserie Techniques

This program consists of the following City & Guilds vocational qualifications:

  • Full-time programsDiploma in Food Preparation and Culinary Arts – Patisserie

Additional training included in this program:

  • First Aid Level 1

This is a 1 year, full-time training program – the first 6 months are spent at the FBI for theoretical and practical training and the last 6 months the student is placed at a five star or similar quality establishment in South Africa for experiential training.

Tuition fees as per the application form include all uniforms (2 chefs jackets, 2 aprons, 2 neckties, 2 skullcaps), a Victorinox professional knife set, all ingredients used by the student over the 1 year period for practical classes, all study material and recipes as well as all City & Guilds registration and examination fees.

CASH – Cash discount is given when the full annual fee is paid in advance upon registration.

TERMS OPTIONS – Please enquire with the administration department for the payment option related to your field of study.

STUDENT LOANS – Documentation required for student loans can be obtained from our administrative department.

Please note that as per the student and academic agreement, deposits are required to secure your seat on the program and that interest is charged on overdue accounts.
