Sundried Tomato, Mascarpone and Caramelised onion Puff Pastry Pie

Don’t let the long title fool you with this easy to make recipe.  If you have all the ingredients at hand, it hardly takes 10 minutes to put it together.  It is also easy to substitute some of the ingredients for example, substitute the sundried tomatoes with thinly sliced fresh ones, and the caramelised onion with olive tapenade.  Similarly, you can use cream cheese instead of Mascarpone.

1 roll ready-made puff pastry (the savoury ones work particularly well)
1 packet of sundried tomatoes (preferably in olive oil, otherwise soaked in boiling water)
1 jar caramelised balsamic onion
1 tub of Mascarpone cheese


  1. Preheat the oven to 220°C.
  2. Roll out the puff pastry on a prepared baking tin.  Fold over 1cm on all four sides and press down firmly.
  3. Bake for 10 to 12 minutes or until slightly browned.
  4. Add dollops of Mascarpone all over the baked puff pastry base.
  5. Arrange the sundried tomatoes and spoonfuls of caramelised onion on top.
  6. Return to the warm oven for another 5 minutes or until the dollops of cheese have melted.

Cut into squares and serve immediately.
